MEDIUM DIFFICULTY


METHOD

  1. Place all the ingredients in a food processor (or, place the flour in a mixing bowl, make a well, and whisk the eggs in the well, gradually bringing in the flour) until they come together in a ball
  2. Knead the dough on a floured surface for 2-3 minutes until it is stretchy
  3. Cut the dough into 4 balls, wrap in cling film / plastic wrap and rest in the fridge for 30 mins
  4. Remove the balls from the fridge
  5. For lasagne sheets, roll the balls as flat as you can with a rolling pin. For noodles or linguine, after rolling flat, roll them up into a loose cylinder and cut gently with a sharp knife and tease out the strips
  6. Add the strips to a large pot of boiling water and cook for 2-3 minutes
  7. Rinse and drain quickly to eat straight away (or, if you want to use it later, run it under a cold tap until it's cool, drain it, place it in a bowl with a little olive oil to stop it from sticking, cover it and refrigerate it for later
