METHOD

  1. Cook the smRt pasta according to the packet instructions

  2. Meanwhile, in a large pot heat your extra virgin olive oil

  3. Add the chilli, garlic and courgette and cook for a few minutes

  4. When the courgette softens, add the peas and beans. Stir it all together and allow everything to heat up

  5. Add the cream, the crumbled stock cube and the mint and bring to the boil

  6. Reduce the heat and simmer until the cream reduces and thickens (you can cheat by adding a bit of parmesan)

  7. Take off the heat and add your pasta, stirring it in well

  8. Turn into a large serving bowl (the pasta, not you…) and garnish with shaved parmesan and your fresh parsley

  9. Serve with the salad of your choice

INGREDIENTS

  • 250g pack of smRt penne (high fibre) or smRt gluten free fusilli

  • 250ml fresh cream

  • 75g frozen peas

  • 75g frozen green beans (magic optional)

  • 75g asparagus (also optional)

  • 1/2 courgette diced into 1cm cubes

  • 2 cloves garlic peeled and chopped

  • 2 tbsp extra virgin olive oil

  • 1/2 veg stock cube (secret ingredient!)

  • Some fresh chopped mint leaves

  • Squeeze of lemon

  • 1 small fresh chilli finely chopped, or pinch dried chilli flakes

  • Grated parmesan and fresh herbs like parsley for garnish
