smRt Chorizo and Goats' Cheese Pasta

METHOD

  1. Cook the smRt pasta according to the packet instructions

  2. Meanwhile, in a large pot heat your extra virgin olive oil

  3. Add the chorizo, garlic and green veg, and stir in, cooking until you get some colour and softness in the courgettes

  4. Add the smRt pasta sauce and stir in

  5. Add the smRt pasta and the goats’ cheese and stir everything together for a few minutes

  6. Turn it all into a large serving bowl and garnish with shaved parmesan and your fresh herbs

  7. Serve with the salad of your choice

INGREDIENTS

  • 250g pack of smRt pasta (high fibre) or smRt gluten free fusilli

  • 250ml smRt tomato pasta sauce

  • 75g chorizo chopped (replace with pinch of smoked paprika and veg for vegetarian option)

  • 100g goats’ cheese

  • 75g asparagus

  • 1/2 courgette diced into 2cm strips (or how you like it)

  • 2 cloves garlic peeled and chopped

  • 2 tbsp extra virgin olive oil or coconut oil

  • 1 small fresh chilli finely chopped, or pinch of dried chilli flakes

  • Grated parmesan and fresh herbs like parsley for garnish

Bonus tip: Tip: Swap any veg for a veg of your choice. Courgettes have a good ‘satiety’ factor and fill you up nicely, especially if you’re a vegetarian and you’re passing on the chorizo.
