Seaweed Soda Bread

MAKES ONE FAMILY-SIZE LOAF
TIME 20 MINS PREP, 35 MINS BAKING
MEDIUM DIFFICULTY


METHOD

  1. Preheat the oven to 200 degrees Celsius (gas mark 6)
  2. Tip the flours, salt, baking powder, linseed, bicarbonate of soda and smRt bake into a large mixing bowl and stir
  3. Add the butter and rub in with your fingertips, creating small breadcrumbs
  4. Make a well in the centre and pour in the yoghurt, mixing quickly with a large fork to form soft dough
  5. Add a little milk if the dough seems too stiff, but it should not be too wet or sticky
  6. Turn onto a lightly floured surface and knead for up to 5 minutes using your hands
  7. Shape into a ball and place onto a floured baking tray or baking stone
  8. Cut a cross on the top, brush with milk, sprinkle with oats or seeds and bake for 30-35 minutes and allow to cool on a wire rack (tip: when your bread is cooked it sounds hollow if you tap the bottom of the tin)
  9. Serve sliced with butter, or cheese and pickle, or soup, or marmalade, or...

INGREDIENTS

  • 1 tsp smRt bake
  • 170g plain brown or wholemeal flour
  • 170g plain white flour
  • ½ tsp sea salt
  • 1 tsp baking powder
  • 1 tsp linseed
  • ½ tsp bicarbonate of soda
  • 290ml full fat plain yoghurt
  • 30g cold butter, cut into small pieces
  • 1 tbsp milk
  • 1 tbsp rolled oats, or sunflower seeds
