MAKES TWO FAMILY-SIZE LOAVES - FREEZES / DEFROSTS WELL

METHOD

  1. Preheat the oven to 190 degrees Celsius (gas mark 5)

  2. Tip the wholemeal flour into a large bowl, and sieve the white flour, bread soda and salt into the same bowl

  3. Mix in the brown sugar and smRt bake

  4. Add the buttermilk and mix well

  5. Divide the mixture into 2 greased 1.5lb (about 680g) loaf tins

  6. Sprinkle the oats on top

  7. Place in the oven for 45-50 minutes

  8. Remove the tins from the oven, wrap in a white cloth and allow to cool on a wire rack (tips: when your bread is cooked it sounds hollow if you tap the bottom of the tin. Take the loaves out of tins before they cool or you might end up with a slightly soggy base.).

  • 2 tsp / 10g smRt bake

  • 350g plain white flour

  • 350g wholemeal flour

  • 25g brown sugar

  • 1/2 tsp salt

  • 1 heaped tsp bread soda

  • 750ml buttermilk

  • Handful rolled oats
