Easy, Healthy Fairy Cakes

MAKES ABOUT 12 MUFFIN-SIZED CAKES

METHOD

  1. Preheat the oven to 200 degrees Celsius (gas mark 6)
  2. Place the paper bun cases into the bun tray
  3. Place all the ingredients into a food processor or mixing bowl
  4. Beat the mixture until smooth
  5. Spoon the mixture evenly into the bun cases
  6. Place in the oven for 15 minutes or until the fairy cakes are golden
  7. Remove from the oven and allow to cool on a wire rack

Halve all the ingredients for 6 fairy cakes.

  • 2 tsp / 10G smRt bake
  • 350g self-raising flour
  • 250g caster sugar
  • 250g butter
  • 4 eggs
  • 12 tbsp water
